GAAP is only relevant for financial reporting purposes.

For decision making purposes, good cost accounting (which ignores GAAP requirements) is critical to managing a business properly.

In reality, the "exploitation" argument really only applies to Football players.

a) Baseball and hockey players can easily choose to go pro if they don't want to attend college on a scholarship; or
b) Talented basketball players (like Mudiay) can play in minor leagues or overseas if they don't want a college scholarship. How much $$$ was Mudiay willing to give up to play for Larry Brown instead of that Chinese team?

The NFL doesn't have real minor leagues because funding 85 man minor league football teams would be a financial sinkhole. The don't want to spend the $100's of millions per year it would take to train the approx. 3-8 "new" players that join each team's roster each year.

Sorry but the GAAP doesn't matter / marginal cost matters - fails miserably, and a Cox grad should know that. The marginal cost for you to stay at the Omni downtown Dallas is about $8.00. Why don't the smart business men there offer such a rate?

The gap between filling hotel rooms and maintaining comsumers' willingness to pay full price is literally the reason Hotwire exists.
