Central Texas has some great Q for sure.

Topper, there was salsa, sweet relish, chopped celery and onions, oyster crackers, and a shaker of red pepper. I probable forgot something. Oh, Jimmy thought lemonade went well with his chili rice.

We are still working on the chili rice recipe. All help, and anything you remember is welcome ...

Topper, hey were in Texas! It's OK for us to talk Chili. It's our state dish... right?

LHP, Wick's and Carroll's are both ways to make some good and easy chili. And... please share whatever you remember about Jimmy and the only dish Dallas can call it's own... Chili Rice.

The two places that sell chili rice at the fair are;

The Texas Cafe inside the main food building

The other is in the old Gebhartd's booth, inside the Embarcadero building.

I once loved the Dickey's mentioned above. It's the original location I think? They once had a BIG wheel of cheese you could cut from.

My last visit I was not that fond of tha Q. They did still have good sides though. Some kind of mashed baked potato was real good.

A humble request for the mods. There are only a few of us left who actually had Shanghai Jimmy's great chili rice. If we can talk here for a while that's great. If this needs to be moved to the hill top that's fine also. Just please don't delete it.

OK, sounds like we can talk here till the season starts but...

I did start 2 threads in the Hill Top section... about BBQ and Chili. All welcome to chime in. :~)

Oh, I was once a cook at El Chico. That was long ago when they had some great Tex Mex.
