Rice Game MENU quandry

Rice - that is easy right? But then we have Tulane coming so the more appropriate spot for
Coon-asz Jambalaya or Gumbo is Tulane. So, Please let me know what you would design a menu.

Some thoughts are
Red Beans and rice with sausage links.
Oysters Rockafella ( Baked oyster with spinach, cheese and spices )
Sorry, my wife said oysters are out due to the season.
How about Owl meat lasagna? French bread and small field green salad.

You know what they say about better..... We are better.

I would recommend an Italian risotto. Easy as fruit cake pie. I make mine with onions, garlic, italian sausage, mushrooms, spinach and shrimp. Dump in a bunch of chopped straight leaf parsley and Parmesano Reggiano right before serving with warm bread.

jtstang, thank you for the idea. I am looking for something I can prepare early and have time to meet and greet while tailgating. The final stages are time sensative so I will pass on risotto. More looking to include OWL meat in something.

OMG did you say that.

The Lobster and Crab came OUT well.

Owl meat lsagna is sounding good.

can you really buy owl meat? Owls may look big but they are 95% feathers. Just buy chicken and tell everyone it is owl.
