News Flash - just got phone confirmation of Gator meat.
This will be given a cajun rub (no comments mestango) and smoked.

Picked up Gator meat this afternoon from our own Ryan Wolcott.
I am going to prepare with a slice of jalapeno, cheese and wrap in bacon.
Then smoked.
