Looks like you can order on the Rams store online under custom shirt. They have a drop down menu for players.

Garrett sure has changed numbers a lot in his career...

And it is my knowledge that Garrett wore #7 because his childhood idol was John Elway. His freshman year at UT, someone else (I don't remember who) was already wearing #7. And when he got to SMU, Der’rikk Thompson was wearing it. I don't see a #7 on St. Louis' roster, although

The Rams retired 7 for Bob Waterfield (QB, 1945-1952).

I also would imagine Tavon Austin is safe with 11 so Gilbert will likely end up being 5 once all is said and done.
