Not only would they be more visible from that perch, you could set up an information booth/table about the Mustang rescue foundation. Allow people to see, and possibly pet, those animals up close. Use it to raise funds for the rescue foundation - as their gift was purportedly intended.
Having them stand in a corner of the field for the entire game does no one any good, inspirationally or otherwise. If we must have them, at least use them for some good - to raise money and interest for the Mustang rescue.

As far as having them graze without riders, that may require fencing etc., but what if you have one with a rider and the other without. The rider could then control both...the one he is sitting on of course and the other by holding on to a rope attached to the others bridle or whatever they attach a rope to when leading a riderless horse around. Then we would have one true mustang, i.e., no rider.
