:?:

Will the Saturday affair be a scrimmage or something done under game like conditions with the squad dividedf into two teams and both with an offense and defense?

If history is any indicator, probably something closer to your second suggestion. In years past, they've gone through game situations, often one series at a time, but then the coaches will suddenly stop the "game" to kick field goals, or repeat a play -- not because of a penalty or incomplete pass, but to practice a certain aspect that went wrong (a pass route, a blocking scheme, etc.)

Should be entertaining, though. I'm eager for some football, and to check out the new offense.
