I recommend that if you're going to have steak that night that you marinate it in your fridge for the whole day. My marinade mix is so simple, two parts Italian salad dressing (oil, vinegar and herbs) and one part red wine (usually its started to turn a bit and has a little vinegary kick). Add your rub, or pepper and garlic (I don't use salt at all). Either grill, broil or fry, and it will be tender, moist and tasty. Make sure you use the exhaust fan over your stove going full power and keep a window open for either method.

I like to sear it on high heat in a cast iron pan, flip it once after two minutes, and throw the whole thing in a 400 degree oven for a few minutes after that. Less smoke and your house doesn't smell like Bob's for the next week.
