An 8 team playoff would suffice and that is very doable. Give the SEC, Big XII, BIG, and PAC 12 an automatic bid and then have 2 automatic bids for the highest ranked conference champions from the remaining conferences. Then leave 2 at-large bids for the highest ranked teams not already in.
