The reference to Sake as rice wine is technically incorrect. The Rice has to be meshed similar to beer so that the starches in the rice are converted to sugar. Wines use the naturally occurring sugars in the fruit in a direct fermentation process.

The meshing differs from beer meshing in that natural germination enzymes in the grains convert the starches to sugars.

In sake, the conversion is achieved by using a fungus, Asperigillus oryzae, to convert the starches to sugar. And this process also differs from beer meshing in that fermentation and meshing can take place simultaneously in sake.

Thus, sake is actually closer to beer in that it requirees a brewing porcess.

As catchy as the drink name is, I was not surprised when I googled "Tequila Mockingbird" to find that it already exists. Others make it with tequila, creme de menthe, and lime or lemon. Yuk.

Mine will be perfect for an 11am kickoff. Here's the recipe:

Over ice,
Tomato juice
2 oz Patron Silver
Pinch of smoked sea salt (from Whole Foods)
Ground pepper
Good shake of Tabasco
1 tsp of Worcestershire
1/2 lime

Garnish with fresh cilantro.

If I'm feeling feisty, I will add a little minced garlic. Not good for close up group encounters, though.

I have a drink that is great on cold mornings. 1 part vodka 1 part beef broth and 2 parts whatever tomato drink is your liking.

Heat the juice and broth to almost a boil. Add some celery salt and lime juice. Turn off the heat and add the vodka. Pour into a thermos or serve immediately.
