I go to Memphis all the time so if you have never been to any of the three, let me help you/anyone else interested.
Interstate BBQ is in the fringes of the ghetto but has the best BBQ beans I have ever had, period. Besides that it's decent.
Rendesvous is an institution, no question, and a spot to see eventually. Very convenient also being in the middle of downtown. But if it comes down to one of the 3 you have to go to Central BBQ, best pork I have ever had by freaking miles. In Memphis it is all about pork and everyone who lives in Memphis goes there for a reason, it is so damn good. Central is so good, that it is the reason I felt obligated to post this. I've been to every spot in Memphis, and it is by far the best in terms of pork. Either get a pulled pork sandwich or the pulled pork nachos.
Usually, the team that scores the most points wins the game - John Madden
