Several years ago, when the state of West Virginia made it legal to take home - and use - animals killed by cars, the Roadkill Cookoff in Marlinton was born. Dishes with names like Thumper Meets Bumper, Asleep at the Wheel Squeal, One Ton Wonton, Rigormortis Bear Stew, Tire Tread Tortillas and Deer on a Stick are judged for their taste - or lack of it. Citizens of the state have been picking up, and cooking, roadkill long before they named a festival in honor of the practice.

In eastern Virginia and North Carolina where they grow lots of hogs, they cook the hog either on a rotisserie that you haul behind your pick-up, or you make a porto-pit using cinderblocks and then rig the pig to a harness of 2 x 3s which you flip every 15 minutes for 12 hours. Use a vinegar sauce and man that's some good eatin'. A talent I learned from one of the Courtland old boys, which I have done more than once. Obviously the 12 hours of cooking requires lots of liquor to keep you warm. It feeds 50-100 people per 100 lbs of hog. It also works with pork shoulders, but loses the enui of the hole pig.

Why am I not surprised by the fact its West Virginia. Makes me really want to go to that Marshall game next fall.

I think the hard part will be getting SMU to let you dig the hole!

If you used Turkey sausage that would help the overall fat count and still taste good.

I cooked it for the super bowl! It was awesome!! The entire thing was eaten by 20 people...extremely easy to make...I added to the recipe and put Jalapeños and cheddar cheese in with the sausage..I would make it again! If I knew how to upload pictures I would share my tasty delight!

Nice! I was going to say there should be jalapenos and cheese in there. Good on ya.



As per uploading the pictures, go to a site like photobucket or flickr or some such, get an account, then you upload them to that site (works exactly like attaching a file to an email)... then come back here and post each of your pictures using the following format --
