Does a late bowl, one of the last 3 and the only one on a Sat TV slot help recruiting? Or is it inconsequential?
And a game against a AQ team at that?

I would think it would help. There's a theory in some businesses: "be the last one to meet (a client, etc.)" Under that theory, it sure would be nice to have SMU make the last impression on a recruit considering SMU and some other school that already played in its bowl.

Gary Fatterson doesn't want to play Pitt. He would accuse them of stealing their coaches.

Being on TV like that will be good, just as the Hawaii Bowl was. So many people watched just to see some football. Beat pitt!
